Today, we were supposed to go on a 5k Celiac Walk, but the weather here in Minnesota decided to not cooperate and instead decided to be rainy.
I toyed with going, but since Samuel’s biopsy is less than a week away I thought it best to stay home and keep him as healthy as possible.
So instead of walking to bring awareness to Celiac Disease I thought I’d write about it in some way. I’ve written about our Celiac Disease Journey and how it’s a struggle, but today I thought I’d share something good. Something I’ve learned.
That would be gluten free peanut butter cookies.
Of course, it was influenced by the numerous emails I received asking for a recipe for the cookies pictured in yesterday’s {friday} favorites post.
The trick with gluten free baking? It’s using a variety of gluten free flours. Gluten is the “glue” that makes our bread so doughy, and our cookies stick together, and so on — without it there needs to be a substitute. A trick, perhaps. I’ve got a couple flour blends that I love – Jules and Gluten Free Mama – they are an excellent replacement in almost any regular recipe.
Besides the flour trick you can always add chocolate.
{based off recipe found in the Simply Gluten-Free Desserts cookbook}
1 cup peanut butter {use Jiff Natural}
1 cup sugar {can use white or brown}
1 egg {lightly beaten}
1 teaspoon baking powder {make sure it’s gluten free}
1 teaspoon vanilla
Preheat oven to 350 degree. Grease cookie sheets or line with parchment paper {we did this}.
Blend the brown sugar and peanut butter. Add the eggs and mix. Spoon in baking powder and vanilla and mix for about 1 minute. Put some additional sugar in a small bowl. Roll the dough in a ball and then in sugar and then place on cookie sheet.
Drop cookie 1 heaping teaspoonful at a time on cookie sheets {do not make bigger}, leaving 2 inches between them to allow for spreading {which they do}. Use a dinner fork, stick the tines in sugar, and then press the tines on the dough to flatten, turning fork 90 degrees to make crosshatch. Bake 9-11 minutes. Remove and let cool on racks {we found it best to let them sit on the hot cookie sheet for about 2-3 minutes before transferring. And to add a chocolate chip to the top.}
Makes 2 dozen cookies {which in our house would be gone in a day}.

Yumm! These cookies look great, I will have to try them. Since I cannot eat gluten and now cannot have MSG, soy and such, it makes binding flours a bit difficult. I use to use xyanthan gum or guar gum but these are formed from msg so no longer an option for me. 🙁

This is the staple recipe my friend (with CD as well as two of her 3 young kids) has been using for years. Except here, in Canada, it’s only KRAFT peanut butter that we use! This recipe was actually on the 2 KG family size jar of peanut butter a few years ago and they are awesome!

I was just asking the kids how a whole container of juice (which is a rare purchase for me) is gone in a matter of hours. Apparently, we can never have too much of a good thing 🙂

Yummy! My sister’s in laws struggle with celiac also. Her wedding reception in NYC will be gluten free! They all love flourless chocolate cake. It reminds me of cheese cake! I haven’t found a recipe I love yet, but I keep trying!

2 c. butter (NO SUBSTITUTES!!) 3 c. brown sugar 4 eggs 2 tsp. pure vanilla

makes 12 doz.
3-3/4 c. brown rice flour 1-1/4 c. potato flour (NOT STARCH!!!! must be yellow flour) 2 tsp. xanthan gum (opt.) 2 tsp. baking soda 1 tsp. salt 4 c. President’s Choice ‘The Decadent’ semi-sweet choc. chips
In a large bowl, beat the butter, sugar and eggs until fluffy. Add the vanilla. In a separate bowl, mix together the flour, baking soda and salt. Stir about 1/3 of the flour mix into the first mixture. Add in choc. chips while the dough is soft. Add in the rest of the flour mix. Drop by teaspoonfuls onto a non-stick cookie sheet. Bake at 350 for 11 minutes. Let cool on cookie sheet for five minutes, then remove to a rack and let cool completely. NOTE (from Cheryl B.): I rejoiced when I finally found a chocolate chip recipe made with butter and no hydrogenated oils that did not become so flat I had to scrape them off the pan. This recipe is HUGE – I always freeze most of these cookies, and take out a few at a time, whenever I think the kids need a treat! If you store them in a cookie jar – make sure that it seals tight, or they will become a pile of crumbs.

mmmm! i’m sorry about the rain and missing the walk! but, i’m certain these cookies could cure any frowns! it’s interesting, because when i make a cookie recipe that includes peanut butter it tastes perfect with the egg substitute. i guess pb covers up a multitude of missing flavors. go pb!!! : )

I went on a walk this morning (although the rain held off for which I was very grateful) in honor of Collin Bowen. He died for our country. His family holds a walk as a fundraiser every year. They set up a scholarship fund in his honor. I couldn’t make it to Indiana, but could definitely walk here!
