There are some days where I get frustrated for Samuel that he can’t eat gluten. Like those times when we want to order pizza {I’ll make him his own pizza}, or there’s the pastry table set up at church, or when we have hotdogs and he can’t have a bun, or when I take him down the cereal aisle at Target. He knows he can’t have it — after all — he’ll tell me “me gooten fwee” — and yet there are days where I just feel upset that his diet is so limited. Grateful for his health, but still sad that celiac disease affects his life in daily ways.
Then, last night, Brennan helped me put Samuel to bed. Actually, Samuel wanted his John Deere blanket, which was downstairs, and Brennan brought it up to his room. Once there, I asked Brennan if he would say Samuel’s prayers.
He started his prayers. Thanking God for the day and for Samuel. Asked angels to guard and protect him. And then, all of a sudden, he prayed –
Jesus, please heal Samuel so one day he can eat gluten. And if he can’t let Sammy be happy eating gluten free.
Out of the mouth of my almost eight year old. So innocent. So trusting. So full of faith. How often do I go through life praying with doubt already in my mind? Brennan reminded me to cast all my cares at His feet — and to pray every single day for Samuel. For healing, contentment, strength, and joy.
He’s a pretty happy little guy. Make that a really happy guy.
And very blessed to have a big brother like Brennan.

Have you ever been to ohsheglows.com? Great blog that’s vegan, but she also makes some things gluten free and I think I’ve seen gluten free pizza crust on there.

Oops, you were probably looking for a pre-made, easy gluten free pizza… But that’s still a great blog and I’ll bet her gluten free recipes are good.
How sweet! Jesus said if we only had the faith of a child! Brennan shows that perfect child faith!
I do know that Boston pizza has a great gluten free pizza. You can also use rice or corn tortillas as the base, great for individual pizza or for a very easy from scratch is:
Dry ingredients:
1 1/2 c brown rice flour
1 1/2 c white rice flour
1/3 c potato starch
1/3 c cornstarch
3 tablespoons xanthan gum
1 1/2 teaspoons salt
Wet ingredients:
1/2 c olive oil
1 large egg
2 1/4 c warm water (110 F)
1 packet 2 1/4 teaspoons active dry yeast (gluten free)
Mix together dry ingredients and then separately mix together wet ingredients then combine with a stand mixer on low for 1 minute then turn to medium-high for 8 minutes. Add in extra flour for the right consistency.
Lightly oil a 12×18 inch cookie sheet. On a lightly rice-floured surface, roll dough out into a large rectangle…(I don’t do this I just take the dough and pat it into the pan). Lightly spray a piece of plastic wrap with cooking spray (gluten free) and cover the pan lightly with plastic wrap and allow dough to rise for 45 minutes in a warm, draft free spot.
About 15 minutes before dough has finished rising, preheat oven to 425 F. Remove plastic wrap and bake dough, without topping, for 12 to 15 minutes. Remove from oven and top with desired toppings then return to oven and bake until the cheese melts and is golden brown. Allow 3 to 5 minutes to cool before cutting.
YUM! This is a fantastic recipe and so easy to do. It is so much quicker than traditional pizza crust and I think it tastes better than another homemade pizza I have ever made.

We have been doing Zucchini Crust Pizza lately…quick and easy.
2 cups shredded zucchini (squeeze dry)
2 cups mozzarella cheese
1/4 cup parmesan cheese
1/3 cup rice flour
spices you like…we use garlic/basil/oregano
mix
On parchment paper spread mixture out pretty thin…this made 3 square pizzas..
Bake 450 for 20 minutes…this is important that it looks almost burnt..nice and brown. Remove from oven..let set for 5mins. Apply thin layer of pizza sauce and toppings..put back in oven til toppings look done…wait 5 mins to set…cut-eat-enjoy
This mixture freezes well…just put in warm water to un-freeze . We also did this recipe adding 2 eggs…I preferred 1st recipe 2nd was more like a thin fritatta…good but kids like to cheesey one better.

What a sweet prayer! You might call around your area because some places in our area are starting to advertise gluten-free pizza (Papa’s Pizza I know for sure).

What sweet boys you have! Brennan’s simple trust in God’s goodness is a great reminder to me. As the older sis of a special needs boy, I find myself so frustrated and helpless when Josh struggles to get around issues that are so simple and straight-forward for “normal” people. Oh to be able to have the faith of a child. No wonder Jesus cherished children so much and told us to be more like them.

Davannis offers a thin crust gluten free pizza. We love davannis at our house, not sure if there is one close enough to you.
Madwoman Pizza! It’s made in Minneapolis and so good I would but it of it weren’t so expensive, even though I don’t need too. You can order by the case on their website or Coborns might still carry it. Their tea cakes are good too.
I have some mix I never used. Maybe I will leave it for you at ballet sometime.

Isn’t it amazing how God uses our children’s voices sometimes to speak to us? WHat a sweet little boy you have. I would be frustrated with the gluten free diet too and trying to find what works. This post was such a blessing and reminder of the importance of what we are pouring into our children…and the rewards of seeing fruit. There is nothing sweeter and more powerful than the sincere prayer of a child. I have often been humbled by this.
Such a sweet brother. I have a boy who will be 14 in December and has been gluten free most of his life. He is ok with it but it bothers me sometimes too. Try Glutino. They have amazing gluten free pizzas and mac n cheese. Amazing!

Such a sweet post! And my Mom is on a gluten free diet and if I remember right got some pizza crust at Whole Foods in Minneapolis…and I don’t know if you’ve tried their gluten free pie crust, but that is really tastly as well!!!! She was pretty amazed with their selection…some of it is pricey, but it’s nice as a treat now and then! Good luck!
Two of my children have celiac disease. The first year was difficult for us. There were diagnosed at 18 months and 3 yrs. old. Thankfully for them all they know is gluten free. They actually don’t mind and want others to enjoy gluten foods that they themselves can not eat. It’s been two years since we went gluten free.Our celiac children are now 5 and 3. Our third child does not have Celiac disease. Our older children want the youngest to enjoy all the gluten she can get. It’s amazing to watch them. They really want others to enjoy that cupcake they can’t have. Celiac disease has taught them things that I never could have. It has blessed our family. They are healthy, and it could be so MUCH worse. Our children aren’t left out. They enjoy everything other kids enjoy, it’s just made a little different. 😉
