We eat gluten free.
Well, at least Samuel and I eat gluten free. Samuel, by absolute medical necessity due to having Celiac Disease, and me, by choice starting with the day Samuel was diagnosed in the hospital. Initially, it was necessary for me (as I was still breastfeeding him and he was so ill that they didn’t want any chance of gluten entering his system), and now, I’ve remained gluten free. My allergies are less, I feel great, and it keeps me focused on providing fabulous gluten free food for him, my Samuel.
The rest of my household? They all probably eat 80-90% gluten free. And, friends, seriously, as hard as it sounds to eliminate wheat, oats, barley, rye and again that wheat — it’s not impossible.
Food can taste good.
So today, I’m writing you sharing with you some of my gluten free secrets. One, is Udi’s. You’ve all heard me rave about them since Samuel was diagnosed. Their double chocolate muffins saved me in those early days of gluten withdrawal. Some other absolute favorites in my home? Their bread, their pizza crusts (I hear they’re coming out w/gluten free premade pizzas…I can hardly wait), and their fabulous yummy cookies.
So Udi’s asked me to share with you a recipe for something gluten free that might surprise you that it’s actually gluten free. Well, for me, the one thing I “thought” I’d miss was baked goods. You know — cookies, brownies, breads, pies, pastries and more. Wrong. You can bake gluten free and it can taste amazing. Udi’s knows that. They make wonderful gluten free food that gets me snapping pictures of it on the way home from the grocery store. Ahem, like the below pictured snickerdoodle cookies.
Speaking of the Snickerdoodle cookies — I have a secret. I use them to make a pie crust. {We had pie for Pi day yesterday.} Yes, yes I do. Before our house went mainly gluten free one of my favorite night time easy treats was that chocolate pudding pie. Of course, back then, I purchase the graham cracker crusts that were pre-made. There are no premade gluten free piecrusts. My solution?
The Udi’s Snickerdoodle Cookie Piecrust Chocolate Pie

1 Container Udi’s Gluten Free Snickerdoodle Cookies
1/4-1/2 cup almond flour
1/2 stick butter melted
Preheat oven to 375. Crush Udi’s Gluten Free Snickerdoodle Cookies. Save one cookie for little two year olds who love gluten free cookies.
Place crushed cookies in a bowl. Add almond flour. Add melted butter.
Mix together and then press into pie plate.
Bake at 375degrees for 8-12 minutes. Watch carefully. Remove and then let completely cool.

either make your own homemade pudding/chocolate mixture or be like me and simply purchase pie/pudding filling (on those busy days, of course) that is gluten free. Make mix according to direction {the kraft instant pudding is gluten free} and fold in 1-2 cups whipped cream. You can, of course, make this with homemade pie filling, but for this post {due to time} I just used the boxed mix. Put in cooled gluten free Udi’s Snickerdoodle pie crust.
Whip up some more whipped cream adding a bit of powdered sugar and gluten free vanilla. Top pie with this. Add some crushed chocolate chips.
Call family. Devour. And capture Samuel in this video…:)
